First Course, Choice of :

* Chilled Gazpacho
* House Salad with Avocado Lime Vinaigrette
* Spinach with Jicima, Mango, and Orange Vinaigrette

Entree Course, Choice of :

* Pecan Fried Chicken with Dauphinoise Potatoes and Vegetables
* Pan-Seared Wild Ivory Salmon with Caramelized Lemon Sauce and
Spinach Mashed Potatoes
(other wild salmon will be substituted if Ivory's are not available)
* Wild Maine Striped Bass with Parsley Pesto Carrots
* Pepperadelle with Tuscan Beef Ragout, Jalapeno Smoked Beef
Sausage and Tenderloin Skewer

Dessert, Choice of :
